Medford Oat Granola

Medford Oat Granola 

Mix the following dry ingredients:
8 c  rolled oats
2 c  fine unsweetened coconut
1 c  wheat germ (optional)
1 c  coarsely chopped or whole pecans or almonds
1 c  cranberry craisins or regular raisins
1/2 c  sunflower seeds or chopped dates/dried fruit
1/2 c  pumpkin seeds
1/2 c  flax seeds
1/2 c  sesame seeds

Bring to a boil:
1/2 c   brown sugar
1/2 c   honey or agave or more sugar
1/3 c  coconut or other oil

Add 1 T vanilla and mix well with the dry ingredients
Spread on 2 large cookie sheets or 3 jelly roll pans
on wax or parchment paper. Bake at 325 for 15-25 min,
stirring once during the baking time.
*You could also use just the dry ingredients and make a hot cereal instead.
